Ingredients:
1/2 to 1 tsp. Old Bay
seasoning
1/2 to 1 tsp. Italian
seasoning
1/2 to 1 tsp. garlic salt or
powder
Dash salt and pepper
2 eggs
1/2 cup milk
3 Tbsp. butter
1 to 2 lbs. bass, filleted
Italian bread crumbs
1 lemon, sliced
Heat oven to 350° F. In
large mixing bowl, combine
seasonings, eggs and milk;
mix well. Rub fillets with
butter, lightly dip into
batter, and sprinkle with
bread crumbs. Arrange
fillets on sheet of foil;
wrap like tent, not touching
sides and top of fish. Place
remaining butter in packet,
if desired. Top with lemon
slice. Bake 10 to 15 minutes
until fish is cooked
through. |
Ingredients:
1 1/2 lb. bass, about 3/4
inch thick
1/4 cup butter
1/8 tsp. salt
1/8 tsp. pepper
1 Tbsp. fresh lemon juice
1 Tbsp. white wine
3 Tbsp. grated Parmesan
cheese
Paprika
Heat oven to 450° F. Cut
fish into serving-size
pieces. Place butter in 13 x
9-inch baking pan; place in
oven 5 minutes to melt
butter. Place fish in pan,
skin side up. Sprinkle with
salt and pepper. Bake 5
minutes, turn over. Sprinkle
with lemon juice and white
wine. Top with Parmesan
cheese. Sprinkle with
paprika. Bake 5 minutes, or
until fish flakes easily
with fork.
Ingredients:
2 tsp. dried oregano
2 tsp. sweet paprika
1/2 tsp. ground ginger
1/2 tsp. pepper
1/4 tsp. cayenne
1 Tbsp. olive oil
4 thick sea bass steaks
Salt
Thyme
Lemon peel, slivered
In large mixing bowl,
combine oregano, paprika,
ginger, pepper, cayenne and
oil; rub over steaks to
coat. In heavy skillet, heat
oil over medium-high heat 2
minutes. Add steaks, smooth
side down; fry 2 to 3
minutes, until just
beginning to blacken. Turn
steaks over, reduce heat and
cook an additional 3 to 6
minutes. Sprinkle with salt,
thyme and lemon just before
serving.
Ingredients:
2 lbs. large bass fillets
Salt and pepper
Garlic powder
1 pkg. prepared onion soup
mix
1 cup white wine
Paprika
Heat oven to 350° F. Wash
fillets and pat dry. Arrange
fillets on large piece of
aluminum foil. Season with
salt, pepper and garlic
powder. Turn edges of foil
to make a bowl. Add soup
mix, pour in wine and
sprinkle generously with
paprika. Bake 1 1/2 to 2
hours or until fish flakes
easily with fork.
